In the spirit of the seasons changing I decided to cook up some fall foods today. Dinner consisted of curried butternut squash and apple soup. It was one of the most delightfully aromatic and flavorful meals I have ever prepared. Then for dessert, homemade masala chai and an enormous oatmeal chocolate chip cookie. DIVINE.
As a sidenote: this past monday I hit my 30 day mark as a vegan without even realizing. It really hasn’t been all that difficult, and has improved my quality of life in more ways than one. One of the best being that I’ve had to expand my culinary horizons to making delicious meals like this one.
